Cabinet pudding is a little bit like Bread and butter pudding, except it is made with either swiss roll or madeira cake......you can put any king of dried fruit in that you like.....I use apricots, pineapple and cherries....fat juicy sultanas and a little bit of angelica too.
You can eat it either hot with custard, or cold with ice cream or cream....and believe me it is delicious. |
